Right, I will then: why is American gravy like bechamel with bits in it  :D ?

Well, I'm not a chef, and I'm not from the south, but if your gravy has lumps in it you probably didn't stir it enough. :lol: 
Some southern cooks make giblet gravy, which includes diced organ meat (heart, liver and gizzard) from the turkey.  I've never had that, myself, but it sounds good.

See in Britain we mix the meat juices with gravy salt which makes gravy a dark colour. In the South of the US the meat juices are mixed with flour which makes it a white, almost bechamel-type sauce. I always wondered why they use flour but I have never been to the US, so haven't yet had the chance to ask a chef or try the gravy.

By the way, gravy with giblets is lovely, you should definitely try it :) .

What else could I ask you.. where do you live and what's the weather like where you are?

I live in Illinois.  The weather today is cool and clear.  No snow yet this year, but it is coming.
